Yummy Eggnog Yogurt Homemade, vegan yogurt is spec Yummy Eggnog Yogurt
Homemade, vegan yogurt is spectacular… especially in holiday flavors and with clean ingredients!  Enjoy the delicious taste of your favorite seasonal drink by the spoonful in this protein packed delight. It makes the perfect start to a busy day or a splendid finale
 to your day with your feet up by the fire. Either way, this nog yogurt will set the mood for your holiday cheer! (Original cashew based yogurt recipe found at @cleaneatingmag with adaptations @haleygoesvegan…and adapted again by yours truly!) Ingredients
 1 cup raw cashews
 1 pitted date
 2 cups cold water, divided
 1 scoop vanilla pea based protein powder (like @Nuzest_usa Smooth Vanilla Clean Lean Protein
 2 probiotic capsules (like Renew Life probiotics with 25 billion live cultures)
 3 teaspoon alcohol free vanilla extract
 1 teaspoon alcohol free almond extract
 ¼ teaspoon ground nutmeg
 2 teaspoons honey 
Chopped persimmon, cranberries and pistachios

Method:
In a high powered blender (like @vitamix), soak cashews and dates in one cup of cold water at least one hour.
Drain and add additional cup of cool water and protein powder. Blend on high until completely smooth.

Pour into a plastic or glass container. Add powder from probiotic capsules and stir with a non-metal spoon to incorporate. Cover with cheesecloth or a light dishtowel. Let sit on the countertop for 36 hours, stirring every 12 hours.
Once time has elapsed, stir in vanilla and almond extracts, nutmeg and honey.  Refrigerate for at least 4 hours or overnight.

Gingerbread Granola
Adapting the "Popcorn Granola” recipe earlier on my feed, this festive twist provides a nice crunch with a perfect blending of everything sugar and spice. Granola is perfect by the bowlful or would be perfect paired with your holiday flavored yogurt (make sure to check out post coming tomorrow for more on this!) Merry Christmas, friends!

Ingredients
2 scoops chocolate pea-based protein powder (like @Nuzest_usa Smooth Vanilla Clean Lean Protein)
1 scoops vanilla pea-based protein powder (like @Nuzest_usa Smooth Vanilla Clean Lean Protein)
1 tablespoon coconut oil, melted (like @anthonysgoods)
1 cup applesauce
2 tablespoons chopped fresh ginger
1 tablespoon vanilla
2 pitted dates
2 tablespoons coconut nectar
2 tablespoons blackstrap molasses
1 tablespoon cinnamon
Pinch of salt
1 cup ground flax
1/2 cup cacao nibs
1/4 cup sunflower seeds
1/4 cup popcorn, un-popped
1 cup oats (GF, if needed)

Method
Preheat oven to 275. Pop popcorn in an air popper.
Mix first 11 ingredients in a food processor and process on high until well combined. Add remaining dry ingredients to a large bowl. Add wet ingredient mixture and stir well to combine. Spread on a parchment lined cookie sheet. Bake 60 minutes, stirring every 15 minutes.

Matcha Sugar Cookies The highly anticipated time o Matcha Sugar Cookies
The highly anticipated time of trimming the tree, listening to Christmas tunes, and baking up a batch of sugar cookies is finally here.  But, long gone are the days of butter and refined sugar in our kitchen...so, I was determined to find a clean eats way to enjoy this holiday tradition.  This recipe delivers!  These cookies are perfectly buttery and soft, yet stable enough to handle your most creative decorating...all just in the nick of time for your festive cookie exchanges.  If you don’t have the vanilla matcha protein powder, feel free to sub vanilla protein yielding a delectable sugar cookie!
Ingredients
1/2 cup vanilla pea based protein powder (like @Nuzest_usa Vanilla Matcha Clean Lean Protein)
1 cup finely ground almond flour
¼ cup coconut flour (like @anthonysgoods)
1 teaspoon baking powder
¼ teaspoon salt
¼ cup coconut oil, melted
2 teaspoons vanilla extract
1 cup applesauce

Method:
Preheat oven to 350 degrees.  Line cookie sheet with parchment paper.
Add dry ingredients into a food processor and pulse to combine.  Add remaining ingredients and process on high until incorporated.
Place dough in a mound on parchment paper. Cover with additional sheet of parchment and use a rolling pin to flatten dough.  Remove parchment and bake for 10 minutes.
Remove from oven and let dough cool slightly. Use cookie cutters to cut fun designs and place cookie shapes on a second parchment covered cookie sheet.  Cook an additional 7-8 minutes (longer if you like a crispy cookie...but we are a soft sugar cookie family). Remove from oven and let cook.  Decorate as desired.  Keep leftovers in refrigerator for up to three days.

Chocolate and peppermint are BFFs in this great creamy, dreamy pie.  The flavors are spot on and the silky texture will have your guests coming back for seconds.  But, it is totally up to you whether or not to tell them about the sneaky veggie inside! ;)
Crust Ingredients
1 1/2 cup oats
1 scoop chocolate pea based protein powder (like @nuzest_usa)
1/2 cup cacao powder
1/2 cup raisins
3 pitted dates
⅓ cup applesauce
2 tablespoons coconut oil, melted
Method: Add oats to a food processor and process on high until a coarse meal is achieved. Add remaining ingredients and process until incorporated. Cover
the bottom of a springform pan with parchment paper and add crust. Press firmly and evenly to form crust layer. Place the crust in freezer while you make the filling.

Filling Ingredients
1 cup cashews
8 pitted dates
6 tablespoons dairy free cream cheese (like @kitehillfoods)
12 oz frozen riced cauliflower, thawed at room temperature
½ cup cacao powder
1 scoop chocolate pea based protein powder (like @nuzest_usa)
¼ cup coconut oil, melted
½ cup canned coconut milk
2 tablespoons coconut nectar
1 teaspoon alcohol free vanilla extract
3 teaspoons peppermint extract
Method: Thaw riced cauliflower on countertop.  Soak cashews and dates in cool water for at least one hour.  Drain. Add
all ingredients in the order listed to a high powered blender (like @vitamix). Blend until smooth. Remove crust from freezer and fill with chocolate cream filling. Return to freezer for 3 hours or until firm and then transfer to refrigerator.  If desired, top with whipped cream.  Best when devoured...I mean, “enjoyed” next day.  Keep leftovers in refrigerator for up to three days.

Oh, the weather outside is frightful…actually, it really is, although I am sure different from the originally intended lyrics.  We have been having a heat wave in So Cal and there have been earth tremors and extreme fire dangers. With all this, I find myself increasingly prayerful…yet not anxious.  Peace that passes all human understanding comes from only one place...knowing that God, at the same time, is both completely good and completely sovereign.

While that truth wraps around me like a warm blanket, I have a holiday bar recipe that is not for the faint of heart.  It is a deep, rich, dark chocolate gingerbread bar for those who are not afraid of the darker side of chocolate.  This would be a great treat to share with friends as a little goes a long way. 
Ingredients
4 flax eggs (4 T ground flax soaked in 1/2 cup warm water for 15 minutes)
1/2 cup almond butter
1/4 cup almond flour
2 scoops chocolate pea-based protein powder (like @Nuzest Rich Chocolate Clean Lean Protein)
3 pitted dates
1 tablespoon blackstrap molasses
5 teaspoons ground ginger (or 5 cubes Dorot frozen ginger)
1 tablespoon alcohol free vanilla
1 tablespoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips (I used Pascha 100% cacao chips), plus 1/3 cup for topping
Cacoa nibs

Method
1.  Make flax egg. Preheat oven to 350 degrees.
2.  Add all ingredients, minus chips and nibs, to a food processor and process until well incorporated. Add 1/2 cup chocolate chips and combine well.
3.  Spread into an 8x8 baking dish lined with parchment.  Bake 30 minutes
4.  Remove from oven and sprinkle 1/3 cup chips over top.  Let melt and spread once chips become shiny.  Sprinkle with nibs.  Let cool on counter for 20 minutes.

Recently, when raving to my friends about the cashew based yogurt on my feed, some mournfully told me that they could not eat cashews.  But, they could eat almonds.  Hmmm…what about almond based yogurt?? So, I gave it a try.  Same recipe as with the cashews, just sub almonds and add a bit more water.  Results…honestly, I like the creaminess of the cashew better…but, if that is not an option, then this almond based option is pretty great!  Mine turned tart after just 24 hours, so you can let sit longer or shorter depending on your taste preference.  There was a bit of grittiness from the pulp of the almonds, but that was not a deal breaker by any means…especially when you get creative with toppings! 
Ingredients:
1 cup raw almonds (soaked overnight in refrigerator)
1 pitted date (may be optional for those on low sugar diet…if you try, let me know!)
1 1/2 cups cold water
1 scoop vanilla pea based protein powder (like @Nuzest Smooth Vanilla Clean Lean Protein)
2 probiotic capsules (I use Renew Life probiotics with 25 billion live cultures)

Method
Remove almonds from refrigerator and drain.  Pinch almonds between your fingers and slide off the skin.  Place almonds and remaining ingredients In a high powered blender (like @vitamix). Add protein powder. Blend on high until completely smooth. Pour into a plastic or glass container. Add powder from probiotic capsules and stir to incorporate with a non-metal spoon. Cover with cheesecloth or a light dishtowel. Let sit on countertop for 24  hours, stirring every 12 hours. Once time has elapsed, refrigerate for at least 4 hours or overnight. Per taste preference, add vanilla and coconut nectar (or sweetener of choosing), and top with fruit and nuts. Nammie's Butterscotch Pudding Recently, my MIL had Nammie's Butterscotch Pudding
Recently, my MIL had surgery and her recovery involved clear liquids for a few days followed by soft foods.  She requested the mint chocolate pudding (see earlier on my feed), but I knew after that was gone, she would want some flavor variety.  This nutrient dense pudding was designed especially for her.  Packing clean ingredients and muscle supporting protein (something you don’t usually see in pudding), this pudding has a secret ingredient.  You might not ever guess it.  It’s not a veggie.  It’s not a root.  It's something you can’t buy.  Still can’t think of the secret ingredient that makes this pudding so amazingly delicious?  Well, I’ll have to spill the beans…it’s chocked full of love. 💗

Ingredients
4 pitted dates
1/4 cup cashews (or cashew butter)
3/4 cup coconut milk, full fat
1/2 cup coconut oil, melted (like @anthonysgoods)
1 scoop vanilla pea based protein powder (like @Nuzest_usa Smooth Vanilla Clean Lean Protein)
1/4 cup lucuma powder
1 teaspoon alcohol free vanilla
Pinch of salt

Method
Add first 4 ingredients to a high speed blender (like @vitamix). Process until smooth.  Add remaining ingredients and process again until smooth.  Pour into individual serving size dishes and refrigerate for at least 4 hours or overnight.  If desired, sprinkle with chopped cacao wafers. Okay…I’m a sucker for chocolate chip cookies.  But, that becomes tricky in a clean eating lifestyle. No longer.  These rich and chewy bars will satisfy that chippy cookie craving, sans the gluten and dairy. Just be warned…once you take the first bit...have a tall glass of your favorite non-dairy milk at the ready!  These babies cause what we fondly call in my home, “MILK EMERGENCY!" Enjoy your cookies, my friends.

Ingredients
1/2 cup almond butter
3 pitted dates
1/3 cup applesauce
1/2 cup almond flour
1 scoop pea based vanilla protein powder (like @Nuzest Smooth Vanilla Clean Lean Protein)
1 tablespoon coconut oil, melted
1 teaspoon vanilla
1/2 teaspoon baking soda
1/4 cup chopped cacao wafers (like Imlak’esh Organics Cacao Wafers @imlakesh)

Method
Preheat oven to 350 degrees. Add almond butter, dates and applesauce to a food processor. Process until smooth.  Add remaining ingredients, except chopped cacao, and process until incorporated.  Stir in chopped cacao.  Batter will be thick!  Place batter in an 8x8 baking dish lined with parchment paper.  Bake 20-22 minutes.  Let cool completely. So…a while back on my feed, I posted a cashew based yogurt recipe that I had found at @cleaneatingmag.  My dear friend @haleygoesvegan, adapted the recipe…which you can find on her feed.  I took her adaptations and added a few more of my own…and after all that adapting…finally found the PERFECT yogurt!  Not only is it protein strong, but it’s flavor and thickness is on point. This is a must make for everyone…even dairy lovers will be wonderfully satisfied! 
Ingredients:
1 cup raw cashews
1 pitted date
1 cup cold water
1 scoop vanilla pea based protein powder (like @Nuzest Smooth Vanilla Clean Lean Protein)

I love finding easy ways to make comfort foods more nutritious. Potatoes and cream based gravy are subbed out in mere minutes for steamed cauliflower with nut and broth based gravy.  Secret flavor boost is the vegetarian, no-chicken broth!  It’s great stuff. That, plus added protein, makes this one dish you can feel good about serving to your family and friends any day of the year!  Enjoy!

Cauli-Mash
6 cups steamed cauliflower florettes
1 tablespoon coconut oil (like @anthonygoods)
1/4 cup vegetarian no-chicken broth, low sodium (like @imaginefood_)
1/2 cup nutritional yeast
1/4 cup plain pea-based protein powder (like @Nuzest_usa Just Natural Clean Lean Protein)
1 clove garlic, minced
Salt and pepper to taste

Add all ingredients to a food processor and process until smooth.  Adjust taste and consistency as desired.  Top with blender gravy!

Blender gravy- 1 cup walnuts, 1 1/2 cup vegetarian, no-chicken broth, 2 tablespoons nutritional yeast, 1 tablespoon plain pea-based protein powder (like @Nuzest_usa Just Natural Clean Lean Protein), salt and pepper to taste. Add all ingredients to a high powered blender (like @vitamix) and process on high until smooth.  Pour over cauli-mash.
