Baked Stuffed PeppersSuper simple and super nutritious…and dare I say delicious as my family devoured the entire meal! Preheat oven to 350 degrees. Take three organic red peppers, remove top and hollow out cavity. Mix filling in a mixing bowl by adding 1/2 uncooked quinoa, 1/2 cup pureed pumpkin, 1 box drained chickpeas, 1/2 cup organic corn, 1/2 cup chopped frozen spinach, 1/2 cup nutritional yeast, and desired spices (I used a pinch of salt and a shake or two of cumin). Divide filling into peppers and press to stuff cavity. Place a layer of parchment followed by a layer of aluminum foil over peppers and bake for 45-60 minutes, or until peppers are soft. Remove from oven and top with a slice of cheese, or if vegan, drizzle with a balsamic molasses reduction.
