With a few adaptations to @lilsipper’s 5 ingredient anti-inflammatory bread, this gluten-free, protein packed pumpkin bread was born. Enjoy, my friends!Ingredients2 eggs2 scoops vanilla pea-based protein powder (like @nuzest_usa Smooth Vanilla Clean Lean Protein)1/2 cup hemp powder (like @nutiva)1/2 cup almond butter1 cup pumpkin puree1/2 tablespoon apple cider vinegar2 tablespoon coconut nectar1 tablespoon blackstrap molasses1 tablespoon pumpkin pie spice1 teaspoon baking soda1 tablespoon coconut oil (like @anthonysgoods)Pinch of saltMethodPreheat oven to 350 degrees. In a food processor, add all ingredients and process on high until well combined. Scoop dough into a parchment lined bread pan. Bake for 40 minutes. Remove from oven. Cool loaf on a cooling rack. To make drizzle, place 1/2 cup soaked cashews, 4 dates, 1 tablespoon lucuma powder, and 1 tablespoon alcohol vanilla in a high powered blender and mix until smooth. Add almond milk as needed for desired consistency.
