Crunchy Pumpkin SeedsWhole pumpkin eating. Yep, we eat the whole glorious pumpkin (except for the stem and the belly button). So, after my last post showing how we eat the outside of the pumpkin…today I had to show you how we enjoy the inside! Subtly salty, crispy pumpkin seeds…super simple…super clean!Preheat oven to 350 degrees. Remove seeds from cooled roasted pumpkin, avoiding as much of the pulp as possible. Place seeds in a bowl of water and swirl seeds to remove maximum pulp. Transfer seeds from water to a paper towel to drain. Next, place seeds on a parchment lined cookie sheet. Ever so lightly, spray with avocado oil and top with a touch of sea salt. Bake for 25 minutes, or until golden brown. Remove from oven and let cool completely.
