Surprise Chocolate PB CheesecakeThe surprise in this recipe is the sneaky serving of veggies…this delectable pie includes two cups of…wait for it…riced cauliflower! I served this dessert to friends last night, one who happens to be a professional chef. Her expert tastebuds were able to detect many of the ingredients, except the sneaky veg! The cauliflower is totally undetectable! But, if you are a fan of peanut butter and chocolate, this is one dessert you must put on your culinary bucket list! Crust Ingredients1cup oats (GF if needed1/2 cup shredded coconut1/3 cup cocoa powder1 T. coconut oil2 t. alcohol free vanilla1 cup dried plums (approximate)Pinch of saltMethodMix oats, coconut, cocoa powder and salt in food processor. While running, add plums 1-2 at a time until the crust begins to come together and pulls away from the bowl. Place mixture in a parchment lined spring form pan and press firmly to form crust. Chill while making filling. Filling Ingredients1 cup cashews1 bag frozen cauliflower, thawed at room temperature½ cup organic peanut flour (like @anthonysgoods)½ cup almond butter1 scoop vanilla pea-based protein powder (like @Nuzest_usa Smooth Vanilla Clean Lean Protein)1 T. coconut nectar1 T. blackstrap molasses1 T. alcohol free vanilla½ cup coconut oil½ cup dates, soaked for two hours and drainedPinch of saltMethod Add all ingredients to a high powered blender (like @vitamix). Process on high until smooth, using tamper as needed. Taste and adjust sweetness to liking. Pour in crust and place in freezer for at least two hours. Ganache Ingredients3 tablespoons coconut oil, melted (like @anthonysgoods)2 tablespoons cocoa powder1 tablespoon coconut nectar, or liquid sweetener2 teaspoons alcohol free vanillaPinch of saltMethodWhen ready to serve, make ganache by adding all ingredients to a small bowl and stirring until smooth. Spread ganache over top of pie and let sit for 2 minutes to harden. Sprinkle with cacao nibs.
