Baked “Pillow-cakes"After seeing the innovative idea of baked pancakes pop up in recent food blogs (like @chocolatecoveredkatie), I had to try! Sure enough, worked great…with unexpected results. My husband said that they tasted more like bear claws and my oldest daughter said they tasted more “pillowy” than regular pancakes. I guess these delicious orbs could more aptly be called “Pillow-cakes” since no pans were used! Anyway you choose to call them…they are um-um good!Ingredients2 ripe bananas1/2 cup vanilla almond milk (or milk of choosing)2 tablespoons apple cider vinegar2 cups oats (GF if needed)2 tablespoons baking powder1 scoop vanilla pea-based protein powder (like @Nuzest_usa’s Smooth Vanilla Clean Lean Protein)1 tablespoon alcohol free vanilla1 tablespoon coconut oil, melted (like @anthonysgoods)1 tablespoon blackstrap molasses1 tablespoon coconut nectarMethodPreheat oven to 350 degrees. Add all ingredients to a high powered blender (like @vitamix) and blend until smooth. Line a cookie sheet with parchment paper and pour batter into 8 pancake sized rounds. Place in oven and lower temperature to 280 degrees. Cook 17 minutes or until golden brown. No need to flip!
