Jackfruit Oatmeal CookiesLast day of jackfruit week…and saved the best for last! This is an awesome, drool-worthy oatmeal cookie…and the added fiber of the jackfruit, oats and garbanzo beans makes for a nutritious and satisfying snack any time of day. This is a cookie that you can feel good about…and it is fully hubby and kid approved! Win-win in my book!! Ingredients3 tablespoons flax (soaked for 5 minutes in 1/4 cup water)2 scoops vegan vanilla protein powder (such as @Nuzest_usa Smooth Vanilla Clean Lean Protein)2 tablespoons coconut oil, melted1 teaspoon vanilla1/3 cup pitted dates1/2 cup jackfruit (canned, drained and rinsed)1/3 cup applesauce1 cup garbanzo beans, drained and rinsed1 teaspoon cinnamonPinch of salt1/2 cup raisins1/2 cup walnutsMethod: Preheat oven to 350 degrees. Presoak flax while preparing the rest of the ingredients. Add all ingredients, included soaked flax, minus the walnuts and raisins, to a food processor. Process by pulsing to combine. When batter is fully incorporated, add raisins and walnuts. Pulse to combine or stir in with a spoon. Place cookie batter on a parchment lined cookie sheet and bake for 17-20 minutes, or until edges are lightly browned. Let cool completely.
