Asian Jackfruit Cabbage Cups! Just grab a can of jackfruit from Trader Joe’s…drain, rinse and chop. Drizzle avocado oil into a warm skillet and stir-fry jackfruit with some minced ginger and coconut aminos or teriyaki sauce. After 3-4 minutes, remove from heat and add your favorite veggies…red pepper, carrot, snap peas, mushrooms…along with some garlic. Toss everything together with some kelp noodles (or other asian noodle of choice) and spoon into a leaf of cabbage. Terrific dinner…awesome taste!
