Savory Pumpkin BallsIt’s a rare, cold day in So Cal and both kids are under the weather…so, it is the perfect time to bring out some comfort food. These vegan, gluten-free savory “meatless” balls are packed with veggies, plant-based protein, and a ton of flavor! Ingredients are simple and come together in minutes. Throw on top of your favorite pasta and sauce and be prepared for the urge to say “yum" with each bite. Makes 14.Ingredients1 cup GF oats3/4 cup pumpkin1 scoop plain pea based protein powder (like @Nuzest_usa Just Natural Clean Lean Protein)1/4 cup nutritional yeast1/4 cup sunflower seeds1 tablespoon hemp hearts1/2 tablespoon cumin1 tablespoon salt free garlic herb seasoning1 tablespoon Italian seasoning1/2 teaspoon saltMethodPreheat oven to 300 degrees. All all ingredients to a food processor. Process on high until well combined (may still be chunky, which is fine). Scoop tablespoon-sized balls onto a parchment lined baking sheet. Bake for 15-17 minutes, or until lightly browned. Serve over pasta. Matcha Cacao BallsThis is a slight twist of my “Choco-Chews" from awhile back…this time using cacao nibs. Nibs offer fiber and iron and the bitterness pairs perfectly with the sweetness of the dates. Added plant based protein to support muscles and rolled in matcha for an antioxidant and metabolism boost. Combine these superfoods, and you’d be hard pressed to find a trick in this treat! Ingredients5 pitted dates1/4 cup cacao nibs1 scoop vanilla pea based protein powder (like @Nuzest_usa Smooth Vanilla Clean Lean Protein)1/4 cup powdered matcha Method: Add all ingredients, minus matcha powder, to a food processor. Process again on high until dough ball forms, approximately 4-5 minutes. Using hands, tear pieces off of dough ball and roll into balls. Roll in matcha powder. Press matcha into ball to secure powder. GF Pumpkin BarsPumpkin-fest continues at our home! This time, in the form of moist and delectable pumpkin bars. A recipe adaptation from the amazingly talented @detoxinista (original recipe found here: https://detoxinista.com/coconut-flour-pumpkin-bars/), this version lowers the sugar profile by subbing applesauce…and throws in some protein to support your active lifestyle. Topped with a tangy, creamy icing…this recipe is a keeper! Enjoy!Ingredients:3/4 cup pumpkin puree3/4 cup coconut flour (like @anthonysgoods)2 1/2 teaspoons pumpkin pie spice1 scoop pea based vanilla protein powder (like @Nuzest_usa Smooth Vanilla Clean Lean Protein)3/4 teaspoon baking soda1/4 teaspoon salt1/4 cup coconut nectar1/2 cup organic applesauce2 eggsMethodPreheat oven to 350 degrees. Peanut Butter Coconut Milk YogurtSo, this was my second trial of yogurt this week. For this one, I followed @minimalistbaker’s two ingredient coconut milk yogurt recipe. I used Whole Foods 365 canned Coconut milk (full fat) and two Renew Life probiotics with 25 billion live cultures. I let it sit on the counter for 36 hours and then refrigerated. After chilling in the refrigerator, I then put yogurt it in my greek yogurt strainer, but you could use cheesecloth to achieve the same result. This drained off all the liquid. So much thicker than the one I posted earlier this week. It was very tangy, so I added one scoop of @Nuzest_usa’s Smooth Vanilla Clean Lean Protein and an equal scoop of @Anthonysgoods organic peanut flour. Also, drizzled with coconut nectar. Check out the thickness! Following the photo…I returned yogurt to the refrigerator and let sit overnight. The results the following morning were super thick! Like, wouldn’t even drip off a spoon thick! Between the two, I preferred the flavor of the @cleaneatingmag recipe…but, my hubby preferred the @minimalistbaker coconut version as he liked the thickness. So…toss up! Cinnamon Cashew YogurtHeads up all my vegan and dairy-free peeps (@haleygoesvegan and @sarahburmeister)…this one is for you! For the past 36 hours, I have had two different yogurt recipes sitting on my counter. Here is trial #1…and I must say…it is AMAZING! It is a thinner yogurt, for sure…but totally, totally delicious! It was super easy and the flavor…spot on! Slightly tangy and slightly sweet…perfect base for your all add-ins! Grape ReductionA few weeks ago, a friend and I visited a local Farmer’s Market where we were introduced to a wonderful all natural sweetener made from grapes. As a clean eater who avoids refined sugars, I was intrigued and bought a bottle. I have found it’s flavor to be a delightful addition to many of my yummy eats. As often as I can, I try to eat organic for the produce in the “dirty dozen”…and grapes happen to be in that category. So, in my curiosity, I wondered if I could make my own organic version of this all natural sweetener. I grabbed some organic red grapes at the supermarket and gave it a try. Turned out great! So, how I did it…I took 2 cups organic red grapes and ran them through my cold press juicer (@huromamerica). Produced about 1 cup of juice. Poured juice and one cup of water into a sauce pan and let boil for around 20 minutes, stirring often. I honestly did not time it, but rather watched for the liquid to reduce and thicken. I added 1/2 teaspoon alcohol free vanilla to give it a balanced flavor. I let it cool and poured it into this cute mason jar. The end result produced about 1/2 cup. It is super sweet, so a little goes a long way! Results were thinner than a maple syrup, so if you were looking for a thicker viscosity, simply add less water while reducing. GF Trail Mix PancakesFriday mornings are pancake mornings at our house. I love to create an atmosphere where my kids gently wake up to the sweet aroma of baking goodness rising from the griddle. Eliminates “wrong side of the bed” morning attitudes. And, since these pancakes are for my kids (who love their dairy and eggs), these beauties are protein-packed to support their growing brains and bodies. Totally customizable with your favorite add-ins and delish with your favorite toppings. Ingredients5 eggs2 cups organic cottage cheese2 cups rolled oats (GF)1/2 cup almonds2 dates1 scoop pea based vanilla protein powder (like @Nuzest_usa Smooth Vanilla Clean Lean Protein)1 teaspoon of cinnamon1 teaspoon pumpkin pie spice1 1/2 cups shredded zucchini1/2 cup raisins3/4 cup sliced almondsAdd all ingredients, minus zucchini, raisins and almonds to a high powered blender (like @vitamix) and blend until smooth. Stir in remaining ingredients. Cook on a griddle lightly coated with coconut or avocado oil at medium heat. Flip pancakes once edges turn slightly brown or bubbles form. Once flipped, cook a few more minutes until golden brown. Top as desired. Cashews, in all their creamy goodness, serve as the base for the filling and pumpkin subtly shines through making this a fall-lovers delight. Enjoy with a topping of chopped pecans, cacao nibs and a drizzle of your favorite syrup. Tastes best when a slice is shared with a friend.Crust ingredients1/2 cup coconut flour (like @anthonysgoods)1/2 almonds1/2 cup applesauce1/4 cup raisinsMethod: Add coconut flour and almonds to a food processor and process on high until a course meal is achieved. Add remaining ingredients and process to combine. Cover the bottom of a springform pan with parchment paper and add crust. Press firmly and evenly to form crust layer.
