Apple Roll UpsOver the years, I have seen many recipes for homemade fruit roll ups. I sheepishly admit, I have never tried it for myself because of the investment of a 2-3 hour baking time. Seemed too complicated…too much of a kitchen commitment. Well, this week after preparing lunches for my family, I decided it was time to take the plunge. So, today, in the quiet of the morning, I whipped up a batch (literally took a minute) and let it gloriously bake while the rest of the household gradually arose from slumber. Pumpkin Oat CookiesSo, pumpkin love continues at our house this week…this time in the form of a warm oatmeal cookie. I wanted to create a no-fuss pumpkin cookie recipe with minimal ingredients…but that still held together and tasted great. This cookie hits the mark. Hubby and kid approved, these cookies are a cinch to throw together and can be customizable per your taste with optional add-ins. Recipe makes 6 large cookies…just enough to share with your favorite people and have one left for you. Ingredients1 cup pumpkin puree1 cup oats (GF, if needed)1 teaspoon pumpkin pie spice2 scoops vanilla pea based protein powder (such as @Nuzest_usa Smooth Vanilla Clean Lean Protein)1 teaspoon vanilla1/4 cup raisins (optional)1/4 cup chopped walnuts (optional)MethodPreheat oven to 350 degrees. In a medium sized bowl, whisk together liquid ingredients. Add dry ingredients and using a wooden spoon, stir to combine. If using, add optional ingredients and stir to combine. Drop large mounds onto a parchment covered cookie sheet and flatten slightly. Bake 10 minutes. Let cool. Store leftovers in an airtight container for up to three days. No Strain Nut MilkHomemade nut milks are super creamy and delicious…but, straining the pulp can be a mess! Taking @lilsipper’s suggestion of using nut butter, this milk is a no-strain delight! To make things even more simple, use prepared coconut meat…like I recently found at Trader Joe’s in the frozen section. This milk literally took minutes to make and the results were delicious! Creamy enough to use in your morning cup of joe! Ingredients3 1/2 cup water1/2 cup cashews (soaked for at least 6 hours and drained)1/2 cup coconut meat (I used frozen from Trader Joes)1 tablespoon almond butter1 pitted date1 teaspoon alcohol free vanilla1/4 teaspoon cinnamon (optional)Method: Add all ingredients to a high powered blender (like @vitamix) in order listed. I served this dessert to friends last night, one who happens to be a professional chef. Her expert tastebuds were able to detect many of the ingredients, except the sneaky veg! The cauliflower is totally undetectable! But, if you are a fan of peanut butter and chocolate, this is one dessert you must put on your culinary bucket list! Crust Ingredients1cup oats (GF if needed1/2 cup shredded coconut1/3 cup cocoa powder1 T. coconut oil2 t. alcohol free vanilla1 cup dried plums (approximate)Pinch of saltMethodMix oats, coconut, cocoa powder and salt in food processor. While running, add plums 1-2 at a time until the crust begins to come together and pulls away from the bowl. Place mixture in a parchment lined spring form pan and press firmly to form crust. Baked “Pillow-cakes"After seeing the innovative idea of baked pancakes pop up in recent food blogs (like @chocolatecoveredkatie), I had to try! Sure enough, worked great…with unexpected results. My husband said that they tasted more like bear claws and my oldest daughter said they tasted more “pillowy” than regular pancakes. I guess these delicious orbs could more aptly be called “Pillow-cakes” since no pans were used!
