Chocolate Pumpkin CupsTook some time off from recipe development… sometimes just gotta have downtime…now, back in the saddle and have just posted a NON-FOOD related article on my blog. Drip of Water

This is a very hard post for me to write.  It is my first, non-recipe post in quite some time, and the topic that God has laid up on my heart is weighty.

What crushes my spirit this morning is that my youngest daughter has recently expressed doubt about the reality of God.  She is struggling that the Bible may just be a story that someone wrote…not the inspired Word of God.  She is questioning if there are alternative answers to the questions, “How did we get here” and “How was everything created.”  Last night, she said that although she has prayed the prayer to accept Jesus, she is not sure as to the reality of it all, and therefore, has not really committed herself to Him.

As a parent, this was a crushing blow to my soul.  I know the effects that doubt can have…it’s like a slow drip of water that etches away at foundation of your soul.  Its effects are plaguing, even inwardly decaying, and can drown all sense of hope and joy.  Doubt destroys inner peace.

As her doubts have surfaced, my overall level of anxiety has increased.  I want to fix this for her, but I know I can’t.  I can’t believe for her. I can’t magically take these feelings away.  I can’t make this one all better.

This morning, as I was thinking and praying about this…I was struck that she is not the only one with doubts.  They also exist…in me.  Ugh.  As hard as it is for me to admit this, I had to face the fact that I am holding on to doubts about God.  Doubts about His sovereign power in my daughter’s life.  Doubts about His ability to cure her doubting fears.  The fact is that my anxiety is a sign that I have taken her out of His arms and put her into mine.

Oh, Lord, please forgive and help my unbelief!  As Abraham had awe-inspiring heights of faith to place his beloved Isaac on the altar, may I do the same with my babe.   She is not mine to save, but Yours.  It is not my work that will bring her into heaven, but Your completed work on the cross.  Not to my glory, but all glory in salvation is for You. As I confess and repent from my own doubts, I know what I must do.  Signs of doubt illuminate a muted view of God.  So then to douse the doubt and increase my faith, I must elevate my view of God.  I must meditate on the scope of His character, the vastness His resources, and the depth of His sovereign love. Therein lies the cure to restore my inner peace.  Therein is the balm for my heavy heart.

Philippians 4:7-8 (NIV)

Do not be anxious about anything, but in every situation, by prayer and petition, with thanksgiving, present your requests to God.And the peace of God, which transcends all understanding, will guard your hearts and your minds in Christ Jesus.

Finally, brothers and sisters, whatever is true, whatever is noble, whatever is right, whatever is pure, whatever is lovely, whatever is admirable—if anything is excellent or praiseworthy—think about such things.

Crunchy Pumpkin B’Nice CreamSo…I have missed ice cream cones. Store bought gluten-free cones still contain too much sugar for my liking…so, I had resigned myself to be content in my “cone-less” state. One day, however, I was looking in my pantry, and I spied some thin organic rice cakes. These got me thinking. What would it be like to pile banana ice cream on top of one of the squares?? (if you have no idea what banana ice cream or B’Nice cream is, check way back on my feed) So, off I went to make a batch of banana ice cream …and then piled a big scoop on top of the square…and it was JUST LIKE A CONE! Granted, the shape is lost…however the crunch paired with the frozen creamy, dreamy “ice cream” was AMAZINGLY SIMILAR! The rice cakes I have come to love are Lundberg Organic Thin Stackers (@lundbergfarms). The flavor and crunch are perfect and they are firm enough to hold a huge scoop of creamy goodness. In this post, I whipped up some pumpkin B’nice cream by adding 1/2 cup coconut milk, 1/2 cup frozen pumpkin puree, 1/2 cup baked, frozen white sweet potato, 1 and 1/2 frozen banana, 1 scoop vanilla protein powder, 1 teaspoon vanilla and 1 teaspoon pumpkin pie spice to a high powered blender (like @vitamix). I stirred in cacao nibs and then I broke the rice cakes into pieces to simulate the cone crunch. GF Vegan Apple Walnut SconesWhew…what a week! Apologies for not posting for a few days…had sick kiddos and lecture prep to teach Romans 4 for @bsfsdya. Today, little ones are better and podcast is in the bag. To God be the glory! Jesus always supplies just what I need exactly when I need it…such a joy to serve such a perfect Provider! So, on this fabulous Friday…this a slight adaptation of the pumpkin scones posted earlier on my feed. Swapping out pumpkin for applesauce is a winner…and due to the natural sweetness of the applesauce, less coconut nectar was needed. Win, win!! The combo of the cinnamon, apples, walnuts and raisins smells amazing while baking…and tastes even better….especially when shared with a friend. Enjoy!Ingredients1 cup almonds (*alternatively, almond flour)1 cup GF oats (*alternatively, oat flour)2/3 cup coconut flour (like @anthonysgoods)1 scoop vanilla pea based protein powder (such as @Nuzest_usa Smooth Vanilla Clean Lean Protein)1 teaspoon baking soda1 tablespoon cinnamon1 cup applesauce1 tablespoons coconut nectar1/4 cup almond milk2 tablespoons melted coconut oil1 tablespoon alcohol free vanilla1/2 cup chopped walnuts1/2 cup raisinsMethodPreheat oven to 350 degrees. Place almond and oats in a dry blade container for a high powered blender (like @vitamix). Blend together until a flour consistency is achieved (*alternatively, use almond and oat flour). Add flour to a food processor with remaining ingredients, minus walnuts and raisins. Process until well combined. Add walnuts and raisins. Pulse until well incorporated or stir to combine. Place batter on a parchment lined baking sheet. Cover with another piece of parchment and using a rolling pin, flatten dough into the shape of a circle about 3/4” thick. Bake for 15 minutes. Remove from oven and cut into even slices. Return to oven for 10 minutes longer. Remove from oven again and separate slices. Bake another 7 minutes. Remove from oven and let cool. Top with glaze (recipe found on pumpkin scone post) and chopped nuts. Choose any vegan sausage, grill it up, then roll it out to be big enough to wrap sausage. Wrap and bake as directed in original recipe. GF Vegan Pumpkin SconesAfter a few recent visits to local coffee houses, I found the scones and pastries behind the glass calling to me. I resisted…however, I immediately took my cravings to my kitchen in the pursuit of a clean-eats pumpkin scone. Not only did I want it GF and vegan, but I also wanted to use readily available products and uncomplicated prep. After meeting these conditions…tinkering in the kitchen…and testing a batch…I now have to honestly say…my scone cravings have been superbly satisfied. So, for all my GF, vegan peep coffee house patrons…this one is for you. Ingredients1 cup almonds (*alternatively, almond flour)1 cup GF oats (*alternatively, oat flour)2/3 cup coconut flour (like @anthonysgoods)1 scoop vanilla pea based protein powder (such as @Nuzest_usa Smooth Vanilla Clean Lean Protein)1 teaspoon baking soda1 tablespoon pumpkin pie spice1 cup pumpkin1 teaspoon uncultured blackstrap molasses2 tablespoons coconut nectar1/4 cup almond milk2 tablespoons melted coconut oil1 tablespoon alcohol free vanilla1/2 cup cacao nibsMethodPreheat oven to 350 degrees. Savory Pumpkin BallsIt’s a rare, cold day in So Cal and both kids are under the weather…so, it is the perfect time to bring out some comfort food. These vegan, gluten-free savory “meatless” balls are packed with veggies, plant-based protein, and a ton of flavor! Ingredients are simple and come together in minutes. Throw on top of your favorite pasta and sauce and be prepared for the urge to say “yum" with each bite. Makes 14.Ingredients1 cup GF oats3/4 cup pumpkin1 scoop plain pea based protein powder (like @Nuzest_usa Just Natural Clean Lean Protein)1/4 cup nutritional yeast1/4 cup sunflower seeds1 tablespoon hemp hearts1/2 tablespoon cumin1 tablespoon salt free garlic herb seasoning1 tablespoon Italian seasoning1/2 teaspoon saltMethodPreheat oven to 300 degrees. Matcha Cacao BallsThis is a slight twist of my “Choco-Chews" from awhile back…this time using cacao nibs. Nibs offer fiber and iron and the bitterness pairs perfectly with the sweetness of the dates. Added plant based protein to support muscles and rolled in matcha for an antioxidant and metabolism boost. Combine these superfoods, and you’d be hard pressed to find a trick in this treat! Ingredients5 pitted dates1/4 cup cacao nibs1 scoop vanilla pea based protein powder (like @Nuzest_usa Smooth Vanilla Clean Lean Protein)1/4 cup powdered matcha Method: Add all ingredients, minus matcha powder, to a food processor. Process again on high until dough ball forms, approximately 4-5 minutes. Using hands, tear pieces off of dough ball and roll into balls. Roll in matcha powder. Press matcha into ball to secure powder. GF Pumpkin BarsPumpkin-fest continues at our home! This time, in the form of moist and delectable pumpkin bars. A recipe adaptation from the amazingly talented @detoxinista (original recipe found here: https://detoxinista.com/coconut-flour-pumpkin-bars/), this version lowers the sugar profile by subbing applesauce…and throws in some protein to support your active lifestyle. Topped with a tangy, creamy icing…this recipe is a keeper! Peanut Butter Coconut Milk YogurtSo, this was my second trial of yogurt this week. For this one, I followed @minimalistbaker’s two ingredient coconut milk yogurt recipe. I used Whole Foods 365 canned Coconut milk (full fat) and two Renew Life probiotics with 25 billion live cultures. I let it sit on the counter for 36 hours and then refrigerated. After chilling in the refrigerator, I then put yogurt it in my greek yogurt strainer, but you could use cheesecloth to achieve the same result. This drained off all the liquid. So much thicker than the one I posted earlier this week. It was very tangy, so I added one scoop of @Nuzest_usa’s Smooth Vanilla Clean Lean Protein and an equal scoop of @Anthonysgoods organic peanut flour. Also, drizzled with coconut nectar. Check out the thickness! Following the photo…I returned yogurt to the refrigerator and let sit overnight. The results the following morning were super thick! Like, wouldn’t even drip off a spoon thick! Between the two, I preferred the flavor of the @cleaneatingmag recipe…but, my hubby preferred the @minimalistbaker coconut version as he liked the thickness. So…toss up!
