Cauli-Fall OatsThis is a photo re-do of a recipe I posted last spring…but, it is in autumn that this recipe really shines. Reminiscent of steel cut oats, this veggie-packed breakfast offers a scrumptious and aromatic way to start your morning. Fully customize with your favorite nuts and berries for a super satisfying breakfast. Serves 2Ingredients 2 cups organic riced cauliflower½ teaspoon avocado oil1 cup cooked autumn squash or pumpkin½ cup vanilla almond milk (or alternative)½ teaspoon vanilla½ banana½ tablespoon cinnamon, plus ½ teaspoon for topping1 scoop vanilla pea based protein powder (like @Nuzest_usa Smooth Vanilla Clean Lean Protein)Chopped nuts and berries, for topping (if desired)Method:To rice cauliflower, place half a head of cauliflower broken into florets into a food processor. Pulse approximately 20 times, or until the cauliflower is the size of grains of rice. In a saucepan over medium high heat, add avocado oil and 2 cups of riced cauliflower. Saute for 4-5 minutes.While cauliflower cooks, add the rest of the ingredients into a food processor. Process on high speed until smooth, for approximately one minute.Add the liquid mixture to a saucepan with the riced cauliflower. Caramel KrispiesTis the season for caramel! Caramel apples… chocolate covered caramel candies… caramel apple pie. They are all delicious in my book, although far from nutritious! Here is a recipe make-over where caramel meets cereal. Results are strikingly reminiscent of a favorite cereal childhood treat, and the added protein in these rice treats is a happy bonus! Ingredients1 teaspoon lucuma powder1 scoop vanilla pea-based protein powder (like @Nuzest_usa Smooth Vanilla Clean Lean Protein)1/4 cup coconut oil (like @anthonysgoods)1/4 cup coconut nectar1 tablespoon alcohol free vanilla1 teaspoon blackstrap unsulfured molassesPinch of salt2 cups brown rice krispies cereal (like @barbarasbakery)Method:Add all ingredients, minus cereal, to a medium saucepan and cook on medium low heat for 10 minutes, stirring constantly. Coconut Pumpkin BisqueFall is a great time to get in the habit of soup making. Store bought versions often have rocket high levels of sodium, but when making soup in the kitchen…you’re in charge of what goes in. This seasonal soup could not be easier to put together and takes mere minutes. The flavor duo of coconut and pumpkin was a smashing success lending to a slightly sweet, yet savory dish. A specially flavored protein powder was used here…and was amazing, however, plain or vanilla protein powder could be substituted easily. Spanish Delight CupsI have fond memories of my grandmother making a casserole dish which she lovingly called, “Spanish Delight.” The flavors of this childhood favorite hold a strong, comforting memory for me. These muffin cups remind me of those same festive flavors…with minimal effort. Customize them as you wish with the add-ins you have on hand…and make a few extra as they make great lunches on the go! (Adaptation of english muffin recipe from from @thebigmansworld)Ingredients1/3 cup oats, gf if needed1 tablespoon chia seed1 scoop plain pea based protein powder (like @Nuzest_usa Just Natural Clean Lean Protein)1 tablespoon nutritional yeast1/2 teaspoon baking sodaPinch of salt6 tablespoons vegetable broth, low sodium2 tablespoons tomato sauce1 tablespoon olives1 tablespoon chopped pepper1 tablespoon chopped cilantro1 tablespoon corn1 tablespoon diced tomato1/2 teaspoon cuminMethodAdd all dry ingredients into a high powered blender using a dry blade container (such as @vitamix). Baked Stuffed PeppersSuper simple and super nutritious…and dare I say delicious as my family devoured the entire meal! Preheat oven to 350 degrees. Take three organic red peppers, remove top and hollow out cavity. Mix filling in a mixing bowl by adding 1/2 uncooked quinoa, 1/2 cup pureed pumpkin, 1 box drained chickpeas, 1/2 cup organic corn, 1/2 cup chopped frozen spinach, 1/2 cup nutritional yeast, and desired spices (I used a pinch of salt and a shake or two of cumin). Divide filling into peppers and press to stuff cavity. Place a layer of parchment followed by a layer of aluminum foil over peppers and bake for 45-60 minutes, or until peppers are soft. Remove from oven and top with a slice of cheese, or if vegan, drizzle with a balsamic molasses reduction. Back in the saddle today, and was excited to see @lilsipper’s recipe in my inbox this morning. Whipped up a batch of these brownies and they were great! With a few adaptations to @lilsipper’s 5 ingredient anti-inflammatory bread, this gluten-free, protein packed pumpkin bread was born. Crunchy Pumpkin SeedsWhole pumpkin eating. Yep, we eat the whole glorious pumpkin (except for the stem and the belly button). So, after my last post showing how we eat the outside of the pumpkin…today I had to show you how we enjoy the inside! Subtly salty, crispy pumpkin seeds…super simple…super clean!Preheat oven to 350 degrees. Remove seeds from cooled roasted pumpkin, avoiding as much of the pulp as possible. Place seeds in a bowl of water and swirl seeds to remove maximum pulp. Transfer seeds from water to a paper towel to drain. Next, place seeds on a parchment lined cookie sheet. Ever so lightly, spray with avocado oil and top with a touch of sea salt. Bake for 25 minutes, or until golden brown. Remove from oven and let cool completely. Edible Pumpkin SkinDid you know you can eat the skin of many fall squashes? Delicata and acorn squashes top my list…along with the seasonal beauty…pumpkin! Since I am eating the skin, I tend to buy organic or locally sourced pumpkins from farms which I know don't use pesticides. Simply wash pumpkin, preheat your oven to 350 degrees, and place pumpkin on a rimmed baking sheet. Bake for at least 2 hours…but baking time will vary depending on the size of the pumpkin. I usually bake whole until the skin gives way when poked with a wooden spoon. Carefully remove from oven and very carefully create a steam vent by piercing the flash with a knife. Let sit on the countertop in the rimmed sheet until completely cool. Liquid from pumpkin will drain into the baking sheet…watch that it does not overflow. Once cooled, pumpkin skin will easily peel away from pumpkin pulp…and can be eaten as is or drizzled with a bit of coconut nectar and sprinkled with pumpkin pie spice. I have even seen recipes for dehydrated pumpkin chips…but my pumpkin peels never stick around long enough for that!
