Ice Cream Cone PieTook a few days off this week to write a Bible Study Fellowship lecture for Romans 2…but that is now in the bag! Praise !!! Back in the kitchen with full force and inviting you to experience your favorite childhood treat in a new way. Ice cream cones as a pie! The “nice” cream filling is made with frozen bananas and swirled with homemade caramel…while the crust has uncooked quinoa lending a slight crunch with each bit. Takes a little patience…but as is with most good things, totally worth the way! Blessings and hugs to you all this last day of September! Crust ingredients: 1/2 cup walnuts1/2 cup hemp hearts1 scoop each chocolate and vanilla pea based protein powder (like @Nuzest_usa Clean Lean Protein)1 tablespoon lucuma powder1/2 cup raisins1/4 cup cocoa nibs1/2 cup dates1/3 cup uncooked quinoaPinch of saltMethod: Place walnuts and hemp hearts into a food processor and process until crumbly. Add remaining ingredients and process until well combined. Press into a parchment lined springformed pie pan and place in freezer. “Nice” Cream Filling1 1/2 cups frozen banana chunks1 can full fat coconut milk, refrigerated for 12 hours1 scoop vanilla pea based protein powder (like @Nuzest_usa Smooth Vanilla Clean Lean Protein)1 tablespoon lucuma powderMethod: Add all ingredients to a high powered blender (like @vitamix) and blend until smooth. Pour contents into springform pan with prepared crust.Caramel Swirl1/2 cup pitted dates, soaked and drained (water reserved)3 tablespoons water (from soaked dates)1 teaspoon molasses1 scoop vanilla pea based protein powder (like @Nuzest_usa Smooth Vanilla Clean Lean Protein)1 tablespoon lucuma powder1 tablespoon alcohol free vanilla1 tablespoon coconut oil2 tablespoons coconut nectarPinch of saltMethod: Add all ingredients to a high powered blender (like @vitamix) and blend until smooth. Once “nice” cream filling is halfway set (about 2 hours), swirl caramel on top and drag with a knife to cause caramel to set into cream. Return to freezer for an additional 3 hours to firm. Slice and enjoy drizzled with chocolate and cacao nibs.
