Green French ToastTaking @lilsipper’s 4 ingredient bread (which turns GREEN from a harmless reaction between the chlorophyll in the sunflower seeds and baking soda)…and making GREEN FRENCH TOAST. Ingredients@lilsipper’s 4 ingredient bread (used sunbutter, eggs, apple cider vinegar, baking soda)1 scoop pea-based vanilla protein powder (like @Nuzest_usa Smooth Vanilla Clean Lean Protein)1 cup almond milk4 eggsDash of cinnamon1 tablespoon alcohol free vanillaMethodWarm griddle on medium-low heat. Add protein powder, milk, eggs, cinnamon and vanilla to a high powered blender (like @vitamix) and blend on high until blended. Reduce to a low speed and run approximately 10 seconds to reduce the bubbles in the batter. Pour into a casserole dish. Slice bread lengthwise. Bathe bread in french toast batter and let soak approximately one minute. Flip and let soak another 30-60 seconds or until liquid has absorbed into bread.Lightly coat griddle with coconut oil. Place battered bread on griddle and cook 7-8 minutes. Flip and cook an additional 7-8 minutes or until bread is fully cooked and slightly browned.Top as desired and pair with your favorite fruit. Minty Chocolate CupcakesNot too long ago, I posted a recipe for Mint Matcha Frosting. As promised, here is the peppermint cupcake recipe that provides the perfect pairing. Dark chocolate and light wisps of peppermint…with added protein and veggies from Nuzest’s Just Fruit and Veg, Cacao Mint…will make this your new cupcake bestie. Makes 4 large cupcakes.Ingredients1 container black beans, rinsed and drained 2 scoops @Nuzest_usa Just Fruit and Veg, Cacao Mint1/2 cup cocoa powder2 tablespoons coconut oil, melted (like @anthonysgoods)3-4 dates, pitted⅓ cup applesauce1 tablespoon unsulfured blackstrap molasses2 tablespoons coconut nectar½ teaspoon baking powder1 teaspoon peppermint extractPinch of salt Method: Preheat oven to 350 degrees.Add beans, coconut oil, applesauce, molasses, and dates to food processor and run on high until smooth, scraping down as needed. Add remaining ingredients and pulse to combine.Add batter to four silicone cupcake molds. Bake for 25-30 minutes. Let cool for 15 minutes on the countertop. Then, place in the freezer for one hour. Homemade SyrupAs the saying goes, “necessity is the mother of invention.” True enough in the kitchen! Substitutions, swaps and creative culinary changes sometimes produce superb results! In absence of my typical liquid sweetener, I whipped up a sweet syrup that will now be a staple in our kitchen. Use on everything…pancakes, french toast, ice cream, yogurt…the sky is the limit. You can even use this syrup swap for your traditional sweetener in baked goods. This syrup is not only incredibly delicious, but totally cost effective…costing pennies in comparison to store bought alternatives. Ingredients1 cup dried apricots (like @madeinnature)1 tablespoon unsulphured blackstrap molasses1 tablespoon alcohol free vanillaMethodPlace apricots in a high power blender (like @vitamix) and cover with warm water, letting soak at least 20 minutes. Mounds of Coconut PancakesA slight adaptation of @thebigmansworld’s vegan pancake recipe by adding nutrient-dense protein powder @Nuzest’s Just Fruit and Veg, Fresh Coconut. Inside each scoop of this delicious powder is 5 fruits and 5 veggies…plus pea-based protein to support your hard working muscles. These vegan pancakes are totally fluffy and taste great! Hubby says they taste like a candy bar on a plate! Who knew kale, spinach, broccoli, carrot and beetroot could taste so good! 🙂 Ingredients2 ripe bananas1/2 cup almond milk2 tablespoons apple cider vinegar2 cups oats (gf, if needed)2 tablespoons baking powder2 tablespoons coconut nectar (or 2-3 pitted dates)2 scoops @Nuzest’s Just Fruit and Veg, Fresh Coconut (or vanilla pea-based protein powder like @Nuzest_usa Vanilla Clean Lean Protein)1 tablespoon alcohol free vanilla extractAdd all ingredients to a high powered blender (like @vitamix) and blend until smooth. Coconut Oreo Pie

Over the years, I have had many different renderings of pie. All varieties from restaurant specialties to homemade delights. Sadly, most have been forgettable. Not with this pie. I will never forget this pie. It’s creamy texture and simplistic blending of dark chocolate with whispers of coconut cream…truly memorable with each delicious bite. Oh, and did I mention the secret ingredient?? Check it out for yourself! Yields: 8 servings

Filling Ingredients

  • 3 scoops @Nuzest_usa Just Fruit & Veg, Fresh Coconut (or pea-based vanilla protein powder)
  • 12 oz frozen cauliflower
  • ½ cup pitted dates
  • 1 can reduced fat coconut milk
  • ½ cup coconut oil, melted (like @anthonysgoods)
  • ½ cup cashews
  • ⅓ cup shredded, unsweetened coconut flakes
  • 1 tablespoons alcohol free vanilla

Crust Ingredients

  • 1 cup oats, gluten free if needed
  • ⅓ cup cocoa powder
  • ½ cup shredded, unsweetened coconut flakes
  • 1 tablespoon coconut oil (like @anthonysgoods)
  • 1 tablespoons alcohol free vanilla
  • 1 cup dried plums/prunes
  • Pinch of salt

Ganache Ingredients

  • 3 tablespoons coconut oil, melted (like @anthonysgoods)
  • 2 tablespoons cocoa powder
  • 1 tablespoon coconut nectar, or liquid sweetener
  • 2 teaspoons alcohol free vanilla
  • Pinch of salt

Method:

  1. Thaw cauliflower on countertop until defrosted.
  2. For crust, process oats in a food processor on high until coarsely ground. Add remaining ingredients and continue to process until ingredients completely combine. Continue pulsing until mixture begins to clump together and pull away from the side of the bowl.
  3. Add crust mixture to a parchment lined springform pan. Firmly press crust into bottom of the pan, filling the base. Set aside while making filling.
  4. For filling, add all ingredients to a high powered blender (like @vitamix). Blend on high, using tamper as needed, until thoroughly combined and smooth (approximately 3 minutes).
  5. Pour filling into prepared springform pan. Place in freezer for at least 3 hours to firm. Move to refrigerator 1-2 hours before serving.
  6. When ready to serve, make ganache by adding all ingredients to a small bowl and stirring until smooth. Spread ganache over top of pie and let sit for 2 minutes to harden. Sprinkle with cacao nibs and shredded coconut flakes. Store leftovers in the refrigerator for up to 3 days.
