Whip up a batch over the weekend and enjoy as a topper to yogurt, ice cream, or simply in a bowl poured with your favorite milk.Ingredients1/2 cup sunflower seeds5 cups popped, plain popcorn1 cup oats (GF, if needed)2 scoops vanilla pea-based protein powder (like @Nuzest_usa Smooth Vanilla Clean Lean Protein)1 cup ground flax1 tablespoon coconut oil, melted (like @anthonysgoods)2/3 cup applesauce2 tablespoons coconut nectar1/2 cup organic raisins 1 tablespoon cinnamonPinch of saltMethodPreheat oven to 275. Mix dry ingredients, except popcorn, in a large bowl. Add wet ingredients and combine. Add in popcorn and stir until incorporated. Popcorn will “soften” when wet.Spread on a parchment lined cookie sheet.
