Unlike many store-bought versions of GF bread, the texture of each slice in this loaf is moist and good-tasting. Holds together perfectly for your most ambitious sammie stacks and would sub wonderfully for french toast. Slight adaptations made to @onegreenplanet’s aquafina mozzarella, this spreadable cheese has a flavor reminiscent of a sharp cheddar. Using soaked cashews as the recipe base, this cheese holds up surprisingly well to baking and is quite delicious sliced on a sammie or spread on bruschetta. Try it once and you will soon find that this vegan cheese will become a new staple in your fridge! Vegan Snack BitesAdapting @lilsipper’s original collagen superfood bites, this vegan version is a must-do! It took mere minutes to whip up. Super SIMPLE. Super GOOD. These tasty snacks can be eaten anytime of day…and would serve perfectly as a mid-afternoon snack or a light dessert. One snack ball alone was super SATISFYING. Husband and kid approved, these snack bites would make a nice addition to any lunch box, guaranteeing smiles for miles! Baked “Pillow-cakes"After seeing the innovative idea of baked pancakes pop up in recent food blogs (like @chocolatecoveredkatie), I had to try! Sure enough, worked great…with unexpected results. My husband said that they tasted more like bear claws and my oldest daughter said they tasted more “pillowy” than regular pancakes. I guess these delicious orbs could more aptly be called “Pillow-cakes” since no pans were used! Anyway you choose to call them…they are um-um good!Ingredients2 ripe bananas1/2 cup vanilla almond milk (or milk of choosing)2 tablespoons apple cider vinegar2 cups oats (GF if needed)2 tablespoons baking powder1 scoop vanilla pea-based protein powder (like @Nuzest_usa’s Smooth Vanilla Clean Lean Protein)1 tablespoon alcohol free vanilla1 tablespoon coconut oil, melted (like @anthonysgoods)1 tablespoon blackstrap molasses1 tablespoon coconut nectarMethodPreheat oven to 350 degrees. Add all ingredients to a high powered blender (like @vitamix) and blend until smooth. Line a cookie sheet with parchment paper and pour batter into 8 pancake sized rounds. Place in oven and lower temperature to 280 degrees. Cook 17 minutes or until golden brown. No need to flip! Tiny Seed CrackersMy kids love crackers. They use crackers as scoops for homemade hummus or platforms for mini-sandwiches. I asked my daughter to count the number of ingredients on the box of “healthy” crackers in our pantry, and she counted 36!!! WHAT?!?! Determined to make my own, I present to you a 13 whole foods ingredient version that you can make simply in your kitchen. Although the ingredient list may be tiny in comparison to store bought, these beauties have huge flavor and major crunch!(Adapted from @cleaneatingmag Ultimate Seed Cracker recipe found in the October, 2016 issue.) Ingredients2 cups cooked quinoa2 plain pea-based protein powder (like @Nuzest_usa Just Natural Clean Lean Protein)1 cup water2 tablespoons chia seed2 tablespoons flax seed2 tablespoons hemp hearts2 tablespoons sesame seeds1 clove garlic, minced1 teaspoon basil, fresh or dried1 tablespoon nutritional yeast1/2 tablespoon coconut oil1 teaspoon sea salt1/2 teaspoon pepperMethod1. Preheat oven to 350 degrees. Add quinoa, protein powder and water to food processor. Process on high until mixture becomes mushy. Add remaining ingredients and process on high until mixture resembles a dough. Add additional water a tablespoon at a time if needed.2. Divide dough into two parts. Place 1/2 of dough on a parchment lined cookie sheet and cover with a second piece of parchment. Using a pizza roller or rolling pin, roll dough into a 1/4” thickness. Remove top piece of parchment.3. Bake in oven for 20 minutes. Remove from oven and cover with parchment. Invert a second cookie sheet on top of crackers and using potholders, carefully flip. Remove top cookie sheet and top parchment. Using a pizza cutter, score cracker dough into squares. Return to oven for an additional 20-30 minutes or until golden brown. Remove from oven and once cool, break into squares. Repeat baking process with second batch of dough. (Note: Edges may darken before middle section. Feel free to remove edges with tongs to give middle crackers longer baking time.) 4. Keep crackers in an airtight container on the countertop for up to 3 days…if they last that long.

Veggie Stuffed Spaghetti SquashAnyone else ready for fall? I love fall…the crisp feeling in the air, the apple festivals, and of course, the fabulous food! Getting a head start on the season with this delicious squash recipe. Simply cook squash as you would typically (check out options for microwaving or baking in the oven) and let cool. Once cooled, cut squash in half lengthwise and use fork to “shred” squash and place in a bowl. Mix with a cup of your favorite hummus, which makes this dish super creamy. Sauté your favorite veggies (pepper, onion, spinach, tomato, garlic) and optional protein (tofu, tempeh). Toss with hummus mixture. Place veggies back into squash hull and broil in oven for 1 minutes (optional, but allows flavors to meld). Drizzle with a molasses-balsamic reduction and a sprinkle of nutritional yeast. Zucchini ice creamYep…you read this right! I eat this at least once a day…sometimes twice! Super simple and ready in minutes! Just take about 3 cups of raw, chopped, frozen zucchini or yellow squash, throw into your high powered blender (like @vitamix), add a scoop of your favorite vanilla pea-based protein powder (I use @Nuzest), about 1 tablespoon alcohol free vanilla (I honestly don’t measure) and enough almond milk to not blow out your blender (probably around 3/4 cup). Using the tamper, blend on high until creamy (add additional liquid if needed). Top as desired. Shown here drizzled with yacon syrup and sprinkle with cacao nibs.
