Oat BakesTook a few days off from posting while finishing our Vacation Bible School at church last week…and now energized to be back in the kitchen! This is one of those easy to make ahead breakfasts which can be thrown together the night before and baked in the morning while getting ready. This protein-packed, baked oatmeal offers a balanced, fuel-filled meal and is a great start to your day…any day of the week!Ingredients2 bananas2 scoops vegan vanilla protein powder (such as @Nuzest_usa Smooth Vanilla Clean Lean Protein)1 1/2 cup oats (GF if needed)1 tablespoon coconut oil, melted1/2 tablespoon baking powder1/2 tablespoon cinnamon1/4 teaspoon salt1/2 cup raisinsMethod: Preheat oven to 400 degrees. Mash bananas in a medium mixing bowl. Add remaining ingredients and stir to combine. Divide into two ramekins, sprayed with avocado oil, and bake for 17-20 minutes, or until edges are lightly browned. Let cool completely. Apricot DelightsAdapted from @thebigmansworld, these apricot delights are so easy and super delicious! It is like a bite-sized larabar…and with the added protein powder, these tasty morsels offer the perfect mid-afternoon snack. The hardest part will be keeping you…I mean your kid’s from eating them all in one sitting!Ingredients1 cup organic, dried apricots1 cup shredded coconut (Reduced Fat Shredded Coconut works fine too)1 scoop pea-based vanilla protein powder (like @nuzest_usa)Method:Place apricots in food processors and process approximately 30 seconds on high until apricots have come together and are sticky. Add coconut and protein powder. Process again until contents have incorporated. Press into a silicone mini-muffin mold and let refrigerate for 30 minutes (although, in all honesty…some did not make it to the fridge!). Lemon SorbetStill in the mood for ice cream following yesterday’s post and current GIVEAWAY (which is still active!!). So here is a super easy, sugar-free lemon sorbet. Recipe is a slight modification to a post a few weeks back…no exact measurements needed…just some frozen banana, frozen pre-cut, raw yellow squash (shout out @lilsipper for great idea here), scoop of vanilla vegan protein powder (like @nuzest_usa), lemon juice and zest from two lemons (or to taste), and a touch of almond milk in a high powered blender (like @vitamix)…and you have a tart, dairy free creation which will keep you puckered…I mean, smiling for hours. Cheery Cherry Sorbet Super sneaky ingredient here to tame the hot dog days of summer! Frozen jicama! (shout out to @lilsipper for culinary genius here!) Eaten raw, jicama tastes like a crisp, savory apple…but when frozen, it becomes tasteless and adds awesome prebiotic powers to your frozen treats. Add that to the antioxidants from cherries, phytonutrients from cranberry juice, and protein from Nuzest and this is one dessert you can feel good about with each and every bite! Happy 4th! Ingredients1 cup frozen pitted cherries½ frozen banana1 cup frozen chopped jicama1 scoop Nuzest Wild Strawberry Clean Lean Protein⅓ cup 100% unsweetened cranberry juiceDesired toppings (shown with blueberries and lemon zest) Yield: 2 cups Method: Using tamper, process all ingredients, minus toppings, in a high powered blender (@vitamix) until smooth. Careful not to over mix as contents will melt. Eat immediately or transfer to an airtight container and freeze. Let defrost 15-20 minutes following freezing. Enjoy! Terrific Tofu TacosBack from an amazing week of Bible training in Texas…and now energized to get back in the kitchen! With summer BBQ festivities underway, this can pose a problem for vegans. But, no more! Inspired by @loveandlemons, consider BBQing tofu. If you have tried tofu in the past, but threw in the towel, this recipe will convince you to try it again. Cooking tofu on the BBQ lends for an amazing taste and texture. Simply take organic extra-firm tofu, slice into 1/2” pieces, place between two paper towels. Place a heavy object on top of tofu for 20-60 minutes to drain maximum moisture. Marinade tofu as desired (shown here with teriyaki coconut aminos). Best to let marinade for at least one hour or overnight. Following marinading, place tofu slices on a warmed BBQ. Let cook for 10 minutes and then flip for an additional 10 minutes. Cook until desired texture is achieved, with longer cooking times allowing for a firmer texture. Once to your likeness, remove from BBQ and let cool. Dress your tacos as desired (shown here with shredded romaine, grilled onions, farm-fresh tomatoes, shredded carrots and lime). For added bonus, warm your corn tortillas on the grill!
