Game Changer BreadWhen your husband announces that a new recipe is a “game changer” you pay attention. That is exactly what happened this morning with this bread recipe. Inspired by @lilsipper’s sunbutter version, this bread is made of reconstituted organic powdered peanut flour and pea-based protein powder making it the perfect way to support your body as it builds and repairs muscle. This bread tasted great and texture was spot on! Not the grainy, dry texture of many gluten-free breads…rather, each slice was all-around on point. Use it as you would any bread…shown here in the form of the beloved almond butter and strawberry. Simply Yum!Ingredients1 cup reconstituted organic peanut flour, using water (like @anthonysgoods…theirs is the BEST)2 eggs2 scoops unflavored pea-based protein powder (like Just Natural Nuzest_usa Clean Lean Protein)1 tablespoon coconut vinegar (although ACV would probably work)2 tablespoons honey (or liquid sweetener of choice)1 teaspoon baking sodaMethodPreheat oven to 350 degrees. Place all ingredients into a stand mixer or use a large bowl with hand mixer to mix batter well. Pour into a parchment lined bread pan. Bake 25-30 minutes, until bread is slightly brown on top. Remove from oven. Using the parchment paper, lift the bread out of pan and let cool on a cooling rack. Cool completely. Cut with a serrated knife lengthwise for bread slices. Cut that way, makes 4 generous slices. Okay…pumpkin lovers…pumpkin recipes continue! Today…PUMPKIN FUDGE! Super simple and simply delicious! Worth searching out a can of pumpkin delight in the middle of summer just to make this delectable dessert! My oldest daughter loves dark chocolate and pecans, hence the topping. And, I dare say…it made this fudge all the more amazing!Ingredients1/2 cup cooked, pureed pumpkin2 scoops vanilla pea-based protein powder (such as @nuzest_usa)1/2 cup almond butter1 tablespoon vanilla1 tablespoon yacon syrup (or alternative liquid sweetener)1 teaspoon pumpkin pie spice2 tablespoons coconut oil, melted (like @anthonysgoods)Chocolate coating of choice, optionalChopped pecans, optionalMethodMix all ingredients in a food processor until well combined. Transfer fudge to a silicone mini-muffin mold and freeze for at least three hours. Remove from freezer and enjoy as is, or top with chocolate coating of choice and chopped nuts. Do I hear a collective cry, “Never!” Good because I received the most beautiful pumpkin (cinderella squash) from my produce guy and had to make some pumpkin delights. Here are pumpkin English muffins…a slight twist to my most recent post (an adaptation from @thebigmansworld). Enjoy pumpkin fans!Ingredients1/3 cup oats (GF, if desired)1 tablespoon chia seed1/2 teaspoon baking soda1 teaspoon cinnamon1 scoop vegan vanilla protein powder (such as @Nuzest_usa Smooth Vanilla Clean Lean Protein)1/3 cup pumpkin1 teaspoon alcohol free vanillaMethod: Add all dry ingredients into a blender or a @vitamix dry blade container. Blend on high until ground into a fine texture. Remove from blender to a small mixing bowl. Add remaining ingredients and stir to incorporate. Place dough into a ramekin and press to smooth. Cook on high in microwave for 2:30 minutes. Let rest and cool for 5 additional minutes. BBQ Pizza CrustFor your eating delight, may I present to you an amazing pizza crust…adapted from @thebigmansworld, this crust is a cinch to put together and offers a delightfully tender crunch. One more reason to keep your BBQ on deck all summer long!Ingredients2 cups baked and mashed sweet potato/pumpkin/acorn squash1/2 cup coconut flour (like @anthonysgoods)1/4 cup tapioca starch (like @anthonysgoods)2 tablespoons Italian seasoningMethod1. Combine all ingredients in a mixing bowl. Switch to kneading with your hands to form a ball. Divide into three equal parts. Place each piece on parchment paper and cover with a second layer of parchment. Using a pizza roller or a rolling pin, roll out each piece until approximately 1/2” thick.2. Remove top layer of parchment and place dough on a large griddle warmed to medium high heat. Remove remaining parchment. Let cook approximately 10-15 minutes, or until dough loosens. Flip and cook an additional 5-10 minutes. Remove from heat. Repeat with remaining dough.3. Top with your favorite pizza toppings and place pizza on a warm grill.
