Delish Chocolate Protein Pudding

A delicious recipe for a quick, and totally satisfying sweet treat.  The hint of cinnamon adds a little flair to the flavor.  Sneak in some protein? Yes, please!

Puddin

Ingredients:

  • 1 medium ripe avocado
  • 2 scoops chocolate Nuzest Clean Lean Protein
  • 1 cup unsweetened vanilla almond milk (or equivalent)
  • ¼ cup cocoa powder
  • ¼ cup pitted dates
  • ¼ cup melted coconut oil
  • 1 tsp cinnamon

 

Method:

  1. Scoop avocado into a high speed blender.   Add the rest of the ingredients.
  2. Pulverize on high speed for approximately 30 seconds, until a thick, smooth pudding is produced.
  3. Scoop into small dessert dishes.  Refrigerate for one hour.  Top with cream (recipe follows).  

 

Whipped Coconut Cream

Method:

  1. Into the bowl of a stand mixer with a whisk attachment, scoop firm cream out of the upper portion of the can (leaving watery substance at the bottom for another use).
  2. Add scoop of Nuzest Clean Lean Protein powder.
  3. Starting on low, gradually work up to high speed.  Beat approximately 3 minutes.
  4. Cream will be firm.  Use immediately or refrigerate and used within 2-3 days.
Power Rounds

Make a batch of these delicious protein packed babies and have enough to last all week!  Free of gluten, dairy, eggs, and nuts…but not taste!  Use them on your sandwiches, burgers, or get creative and use them as mini pizza crusts!  Makes eight five inch rounds.

Bun

Ingredients:

  • ¾ cup quinoa
  • ¾ cup millet
  • ½ cup beans (any canned white bean, drained and rinsed)
  • 1 scoop Nuzest Clean Lean Just Natural Powder
  • ½ cup water
  • 1 teaspoon baking powder
  • ½  teaspoon salt
  • 4 Tablespoons olive or avocado oil
  • Avocado spray (optional)
  • Sunflower or chia seeds (optional)

Method:

  1. Combine quinoa and millet. Soak the mixture in water, covered by at least 1 inch of water. Soak for 8 hours or overnight.
  2. When you are ready to prepare rounds, preheat the oven to 425 degrees. Place parchment paper on cookie sheet.
  3. Drain and rinse the quinoa/millet mixture. Add the mixture and the rest of the ingredients, minus optional, in a high powered blender. Blend on high until the mixture resembles a thick batter.
  4. Scoop the batter out of the blender and spread into five inch rounds onto the parchment. If desired, lightly spray with avocado oil and sprinkle with sunflower or chia seeds.
  5. Bake the rounds for 15 minutes, or until golden brown on the edges.
  6. Remove from the oven. Use as you would in place of a bun or sandwich thin.  Enjoy!

Protein Powder

I am sure that you have noticed that I use Nuzest Clean Lean protein powder in a lot of my recipes.  There is a reason for this.  I am a label reader.  I care about what goes into my food, because it goes into my body.  I care about what goes into my body because as a follower of Jesus, my body is a dwelling of the Holy Spirit.  Since my body is not my own, I better take good care of the loan!   (I Corinthians 6:19-20).

I want clean ingredients without additives, chemicals, or sugar.  Really, the fewer the ingredients the better. Since I am a vegan, I also want a high quality protein source.  So, with those high standards, I went on the search.  Nuzest Clean Lean protein powder fit the mark on all of my standards.  Besides that, it also tastes super good.  Because it is a pea protein base, it thickens well lending to flexibility in the kitchen.

Flag Over Your Heart

So, this week, there was in a cycle of complaint in my family.  Whine, whine, whine.  A grumbling attitude.  During a teachable moment, I responded with “God hates complaining…and when you think about it, complaining does not help you solve your problem.”  My correction did stop the verbal complaint, but my bigger goal is to impact the heart.

As I was meditating on this grumbling spirit in our home and what to do about it, I had to first take a look at myself.  Is there sin in myself that I have caused to trickle down to my family? And, it dawned on me that there are many times when I pray and complain to God.  “Lord, I’m not happy in this area…or this one…just fix it and please give me what I want.”  Whine, whine, whine.

I read somewhere that even if Jesus never did another thing for me outside of what He did for me on the cross…if I truly meditated on His selfless act of love which saved me from the depravity of my sin and eternal damnation, then I would sing His praises all day long, all the days of my life.  With Christ in view, I would never have cause to complain about a single thing.

The truth is that Jesus does abundantly more for me than He did at Calvary.  Psalm 23 is seeped in His care for us.  He is my ever-present Shepherd.  He restores my soul.  When I follow His voice, He leads me to everything I need.  He is my ever-present help.  And, He wants to be with me forever.

I read in my daughter’s devotion last night that joy is the flag of my heart, which indicates therein the King resides.  If I am not being joyful, then, who is residing on the throne of my heart?

May we be ever challenged to confess our selfishness and ask God daily for grace to keep Jesus as High King of our heart.  Then, we will fly high the flag of joy, and reflect the beauty of Jesus to the world around us.

Frozen “Hog-Less” Chocolate Bars

Ever have an urge for a high-end, high-calorie ice cream bar?  Decadent indulgence can be achieved with a surprisingly sensible alternative.  Don’t worry, this recipe will still achieve an eye-rolling, slow-motion chewing effect when you take the first bite. Gluten and dairy free.

Ingredients:

Bars

  • 2 Tablespoons almond butter
  • 1 Tablespoon powdered cocoa
  • 1 scoop chocolate NuZest Clean Lean Protein
  • ½ banana (spottier the better)
  • ½ cup almond milk
  • 2 teaspoons alcohol free vanilla

Coating

  • 1/4 Tablespoons coconut oil (melted)
  • 2 Tablespoon powdered cocoa
  • 1 Tablespoon coconut nectar
  • Chopped almonds (optional)

Method:

  1. For bars, place all ingredients into a high speed blender.  Mix on medium-high speed until smooth.
  2. Pour mixture into ice cream bar molds* and freeze (approximately 5 hours or overnight).
  3. When ready to eat, mix coating ingredients until it forms a smooth sauce.  Adjust sweetness to taste.
  4. Remove bars from molds.  Coat bar in chocolate coating, pressing each side into the chopped almonds as coating dries quickly.  Return to freezer for 5 minutes.  
  5. Devour.

Perfect Soft Taco Shells

Take “Taco Tuesday” to a new level with these protein packed, gluten free soft taco shells. Makes tender tortillas, yet strong enough to hold your favorite taco fixings. Makes approximately 6 taco shells.

Tacos

Ingredients:

  • 2 eggs
  • 1 cup almond milk
  • 1 Tablespoon avocado oil
  • 2 scoops Just Natural NuZest Clean Lean Protein
  • ¾ cup tapioca flour
  • 3 Tablespoons coconut flour
  • ¼ salt

Method:

  1. Heat 8” skillet on medium low while making the batter.
  2. Place all ingredients in a high speed blender in the order listed. Blend on medium speed until a thick, smooth batter is produced.
  3. Pour ¼ cup batter onto griddle, swirl the skillet to form circles.
  4. Flip tortilla after 2-3 minutes when small bubbles form.
  5. Cook another 4-5 minutes.
  6. Remove to plate. Add desired taco fixings and enjoy!

Watermelon Sipper

All time favorite new way to cool down during the dog-days of summer.  Easy and pure.  No additives you can’t pronounce.  No refined sugar or sugar substitutes.  No sticker shock.  Just pure, sweet goodness.

Ingredients:

  • 2-2 ½ cups of cubed sweet seedless watermelon
  • 3 cups of cold water
  • Juice of ½ of a large lime or whole small lime.

Method:

  1. Place all contents into a high speed blender.
  2. Blend on high for 30 seconds.
  3. Pour into glass and enjoy.
